ENISHI began with a simple but ambitious idea: bring the real taste of Japan to the world without cutting corners.What started as a Dan Dan Noodle shop in Kobe has grown into something much bigger, but the soul of every bowl remains the same.Every ingredient is chosen with intention.

Takafumi Shimada
Takafumi Shimada, popularly known as Shimayan (島やん), didn't set out to build a ramen empire. He set out to make the perfect bowl of noodles, and the rest followed naturally.Born and raised with a deep love for Japanese culinary tradition, Shimada spent years refining his craft in Kobe, developing a ramen philosophy grounded in precision and depth of flavour.His signature Dashi-based broth — built from Kombu, premium dried ingredients, and over 32 carefully selected spices — became the foundation of ENISHI. This restaurant earned the Michelin Bib Gourmand award in Kobe and went on to be recognised by Japan's Tabelog as one of the Top 100 Ramen Restaurants in Western Japan for eight consecutive years.Today, Shimada's vision extends far beyond Kobe.With over 80 restaurants in Asia under his guidance, and restaurants now open throughout Japan, Singapore, Bangkok, Kuala Lumpur, and Manila. Nine steps. One team. You're never alone in the process.Here's how it works.

1.) Get in touch
Reach out to us via the contact form on our website.
Tell us a little about yourself, your city, and your interest in ENISHI. One of our team members will get back to you directly.
2.) Meet our representative
Once we've received your message, a member of our team will reach out to schedule a one-on-one conversation. This will be via Zoom or a similar platform. This is a relaxed, no-pressure chat to get to know each other and answer any questions you might have.
3.) Meet Shimada-san
If things look promising, you'll have a direct meeting with our CEO and founder, Takafumi Shimada himself.
This is where the real conversation begins.
4.) Provisional contract
After thorough consideration on both sides, a provisional agreement is signed.
This is the formal first step of our partnership.
5.) Location survey
Once your property is secured, our dedicated design team visits the site to conduct a full on-site assessment.
This includes layout, flow, kitchen requirements, and everything in between.
6.) Concept finalisation
The store concept — interior design, atmosphere, branding details, and uniform — is finalised by Shimada-san himself.
His vision, his instinct. That's what makes every ENISHI store feel like ENISHI.
7.) Full contract
The formal franchise agreement is signed.
Store design, uniforms, equipment, and all operational details are locked in and confirmed.
8.) Training
You and your team train hands-on at one of our operating ENISHI stores: real kitchens, real service, real standards.
You'll leave ready.
9.) Open your doors
Congratulations — you're officially part of the ENISHI family.
We continue to support you after launch, every step of the way. At ENISHI, every partner's success is our success too.
10.) Grow together
You're open, you're serving, and the bowls are going out. But this isn't goodbye. It's the beginning of a longer relationship. We check in, we support, and we evolve together.
